About Short’s Brewing Company
My theory of brewing and sharing beer probably parallels a lot of other brewers and brewery owners out there. Beer, good beer, has a great importance in my life. Not only does it have a very significant historical value, but it has great depth and complexity as a beverage enjoyed universally throughout the world. I believe for one, fermentation is an inevitable phenomenon of nature that has matured with human evolution over time. Humans were designed by nature to drink beer! As humans evolved and became more intelligent, so did their sacred spiritual beverage. And it’s that evolution and mystery behind the ongoing scientific melon scratchers of enzymatic activity and fermentation that drives my artisan approach for producing great beer.
Beer is one of many different fermented alcohols. However, I feel beer is the top prize of them all due to it’s user friendly approach and wide rage of variations it can be consumed in. Just think, there are 76, maybe more recognized beer styles in the world today. Here at Short’s we’re scraping away at the tip of the iceberg. Granted we have plenty to choose from at SBC, but there is a lifetime of endless recipes out there I aim to capture before I can no longer physically hold a 12 oz. bottle to my lips. Again, those recipes yet to be developed, or those strange fruits, herbs and spices yet to be employed, or those fermentation temperatures to manipulate to gear that unicellular fungi which is the workhorse of the ethanol production which creates flavor compounds rarely reproducible maybe only by chance.
That is why you are reading this. Beer is exciting! Brewing is rewarding. Drinking beer is savory. Talking about beer will outlast generations to come. And I want to share that with you. I want you to enjoy my craft in a demographic which I also enjoy. We settled into Bellaire to liberate and innovate, and that is what we are about. At SBC we want to share our passion for beer, good beer, and help you to enjoy the fruits of our labor. That transition from mainstream foreign and domestic mass produced beers is our way of Beer Liberation.
To help us convey that approach, it has taken a bit of innovation. Starting in a small village, it’s no simple task to try and share a complex ale or lager. We have to be creative and innovate our approach. Our pub/deli operations are operated as the nontraditional food and beverage establishment. Our atmosphere is just as unique as our employees, our beer or our menu. Take note, stop in enjoy the comfort of my home and participate in Beer liberation through industry innovation.

Smugglin Plumbs: Sweet perfume of rich roast and plum, cast through hearty malted complexity, finishing slightly sweet and dry. .75 lbs. plumb per gallon. 5.8% ABV
Cup a Joe coffee Cream Stout: Deep aromatics of malt, sweet espresso and cocoa. Flavor is robust with big malt character covered with cream and coffee. 6.0% ABV
The Golden Rule: Our organic English IPA has a simple malt profile which lends most of its attention to the unique hop flavor and aroma. 5.8% ABV
The Magician: A rich lustrous dark red London ale. Rich malt complexities lending notes of toaste caramel, raisins, toffee, and slight roast chocolate. Very light hop additions let the true malt characters promenade throughout the tasting enjoyment this beer
offers. 6.0% ABV
