    Summary

    We are seeking a Kitchen Team Member to join our dynamic team at Short’s Brewing Company. In this role, you will contribute to our mission of providing high-quality food that complements our exceptional craft beers. Your passion for culinary excellence will play a vital role in enhancing our guests’ dining experience.

    Responsibilities

    • Prepare dough for pizza and pretzels following the standardized recipes exactly as they are written.
    • Measure ingredients using the scale and mix according to recipes.
    • Manage dough production by always having dry ingredients scaled and ready for the next day.
    • Mix and shape dough.
    • Manage dough production using sales projections based on last year’s sales numbers to ensure that we’re preparing the correct amount of dough needed for each day.
    • Manage the production of dough and have a pulse on business levels and dough needs. Create a system to ensure the proper amount of dough is prepared even when he/she is not present.
    • Manage the rotation of doughs.
    • Be proficient in all aspects of food prep. Be willing and able to help the prep team with food prep lists as needed.
    • Prep food based on the prep list created by closing management. Keeping a standard par created by the Chef to conform to the business levels.
    • Follow standardized recipes exactly as they are written to ensure quality and consistency.
    • Practice safe food handling to keep all product out of the time/temperature danger zones and to prevent cross contamination.
    • Maintain organization in the walk-in cooler and dry storage areas. Ensure that all product is properly rotated using the First-in/First-out method. Ensure product is labeled correctly, dated, and initialed.
    • Cool all product properly in compliance with the food cooling SOP.
    • Have a plan for the prep list in order to complete everything in a time-efficient manner, recognizing which items on the prep list are a priority.
    • Always maintain a clean, organized, and sanitary work space.
    • Consistently communicate with co-workers and management.
    • Maintain organization in the dish tank and wash dishes as needed.

    Other Requirements:

    • Utilize math skills to accurate to develop accurate measurements for following recipes.
    • At least 2 years’ experience in a professional baking setting.
    • Read and write orders and draft emails.
    • Utilize organizational skills.
    • Communicate clearly with employees and management.
    • Frequent problem solving.
    • ServSafe certified.

    Physical Requirements:

    • Consistently lift and carry 10 pounds and occasionally lift and carry 50 pounds.
    • Frequent bending, stooping, pushing, lifting, kneeling and reaching.
    • Must be able to stand for the entire shift, up to eight hours.
    • Consistently able to use repetitive hand and wrist motion.
    • Work with hot, cold and hazardous equipment.
    • Climb stairs several times a day
    • Frequent washing of hands.
