Origin Story

600 Pounds of Sin - Luke Whitley I really wanted to brew a sour stout after I tried one from another Michigan brewery. I asked Tony & Ryan, and they said yeah, let's do it. I made up a recipe, and we put it in barrels to mature, and sour in the traditional way. The sour stout has been sitting for about 5 months, and that just wasn't enough time to sour, and mature to the point that we were all aiming for. Tony said we should use roughly the same recipe as I had originally written, but make it a Kettle Sour....Which in short, is a new brewing process we have been toying with lately...Bottom line... It's a MUCH faster way to make a sour beer, and the results have been awesome so far. The name is a Grateful Dead reference. In the song 'Dire Wolf', off the "Workingman's Dead" album. (Which is the greatest GD studio album of all time, in my opinion....yes, even better than "American Beauty") There is a line talking about a Dire Wolf who is looking into the window of a person's house, when he awakes from a drunken nap...and referred to the beast as being "600 pounds of Sin"...Then he invites him in, for a game of cards. The malt bill I used for this beer was 600 pounds exactly, So I thought the name would be perfect. A dire wolf is an extinct species of Wolf that was almost double the size of today's wolve species. They were vicious beasts, and thought to be extremely intelligent. Anyway, hope you like it. The taste should be nice and sour at first, finishing with some roasty, chocolate, and tart cherry notes.
