Origin Story

CocoZacca (by Luke Whitley) This beer concept formed in my brain in an instant. It was very much like a cartoon light bulb ignited above my head. We had some leftover Coconut from our Thai Coconut Stout, and while performing my daily duties, I was trying to think of ways to use it in another beer. I thought that an IPL with Coconut sounded pretty damn good. I wanted to use our newly acquired Azacca hops exclusively. These hops have been described as: " Intense and tropical. Sustained impressions of citrus and very ripe mango, with notes of orchard fruit (pears, apples) and pine needles throughout." I thought those characteristics would accompany the coconut in a wonderful way. I also didn't want to make this IPL extremely bitter. I added a large amount of hops towards the end of the boil, and in the dry hop, with the aim to achieve a very tropical flavor/aroma, without making the beer extremely bitter. So I would describe this beer as a West Coast Style India Pale Lager with Coconut. The name CocoZacca is just a word mash of Coconut and Azacca. Although, I think this particular word mash, sounds like it could be some kind of bad ass mythological creature. I was thinking something along the lines of a gigantic cyclops gorilla, who hurls explosive coconuts at his enemies..... ANYway... I'm really happy with how this beer turned out, and I hope you all dig it.
