Mexican cake-inspired Stout with cinnamon, ancho chilies, cocoa nibs, lactose, and orange

El Pastel is a Stout brewed with cacao nibs, lactose, orange, cinnamon, Ancho Chili peppers, and vanilla bean. Very dark brown in color with a frothy mocha head, there are aromas and flavors of velvety chocolate, cinnamon, vanilla, and chili pepper. The Ancho chili peppers provide a slight raisin and roasted quality, melding well with the chocolate notes. This medium-bodied beer finishes smooth with a touch of heat.

Origin Story

This was Ryan Hale's recipe. The name translates to "the cake". This was based on a Mexican style cake recipe. Ryan also chose Ancho Chilis because they are a medium hot and have more of a raisin-like flavor which I thought would work well with a stout and not be overly spicy.
